Bints to Cooks. —Potatoes, at any time of the year, can be made mealy if boiled in salt and water and drained and then covered with a thick towel and left in back of the range five minutes. To retain the color of any •vegetable plunge it into cold water after boiling. Cooks make the mistake of boiling things too much. After reaching the boiling point meats should simmer. The toughest moats can be made tender by so doing. It is always best to under-season than to overseason food. When anything is accidentally made too salt it can be counteracted by adding a tablespoonful of vinegar and a tablespoonful of sugar. Meats of any kind should not be washed, but wiped with a towel to preserve the juices and quality. Foe Keeping Beabs Clean. —A. Clean and polish the work, warm it, and apply a uniform film of the following lacquers ; 1, Shellac, 3oz; turmeric, loz; dragon’s blood, ioz; alcohol, 1 pint. Digest for a week, with occasional stirring, decant and filter. 2. Digest in separate portions of wood naptha or wine spirits an excess of turmeric and dragon’s blood; dissolve shellac in five parts of alcohol or wood naptha (methylio alcohol), and color with the above tinctures (filtered) to suit. 3. Dissolve in about 12oz alcohol ioz shellac, 1 drachm dragon’s blood, and \ drachm •turmeric root. It is sometimes necessary to filter the varnish. It is applied as usual. At first the varnish will seem to be a failure, but in a short time it will have a beautiful gold color.

Cold Meat Oeoqttettbs. — Make some melted butter sauce, leave it on the fire till thick enough to leave a clean mark in the bottom of the saucepan after drawing the spoon across, draw off the fire and add a few drops vinegar, pepper, salt; chop up the meat ■very small and stir into mixture, turn out and leave till cold ; then it will be almost solid ; cut up into pieces rather larger than a walnut, brush over with egg and breadcrumb, and fry in the clarified fat j when of a golden color, take out and drain off the tat from them on kitchen paper.
