BLOWING AND SPOUTING.
To the Editor of the Globe.
Sib, —I observed a small paragraph in your paper on the 16th instant commencing—- “ Disgusting practice,” taken from the Dunedin “ Star.” It stated that butchers blow up their lamb and veal with their breath, and ■pout them with mutton suet. I may state for the information of your readers that the Christchurch butchers know better manners. « They never do it.” We have small bellows purposely to blow them up, and two tin tubes soldered so as to form a triangle shape, with two small holes at the narrow part. When placed in the hot fat, we blow at one end, and the lamb and veal look splendid, without offensive breath, which is not nice where drink and tobacco are used. Yours, &c., 8 PE OH YOU TEE.
