Bbbakfast Dblicact. —Tate a beef kidney, wash and let it stand 15 minutes in cold water ; then put on to cook in salted cold water till it is tender ; eat off th* fat and slice the kidney thin and return to the saucepan on the fire ; cover with hot water, just enough for the gravy; salt and pepper to taste ; add a bay-leaf, butter of the size of a walnut, rolled in flour, and stew till gravy is thick enough. Turn this on hot buttered toast; a bit of onion may be added, if desired.
