THE PRICE OF .MILK. To the Editor of the Globe. Sir, — I see that the milkmen of Christchurch have published a declaration that, on and after to-morrow, the price of milk will be sixpence, per quart, nearly double the price that has been hitherto paid. One of the reasons assigned for this is the scarcity of milk.
I would suggest that, in order to remedy this scarcity, the demand should be lessened. Let each household for the future take half the quantity of milk previously taken, and very soon the supply will exceed the demand, and there will be no necessity for keeping up the price. Don’t you think, Mr Editor, it would also be well if a sample were obtained from each milkman, and submitted to the Government analyst, Professor Bickerton, who might furnish a report (which it would be well to publish) of the percentage of water found in a gallon of milk. Sixpence a quart is rather too high a figure to pay for artesian. Yours, &c., PATER-EAMILIAS. Christchurch, 26th April, 1875.
