BUTTER FROM PASTEURISED MILK.
MILK. AN INTERESTING EXPERIMENT. Press Association. WELLINGTON, August 12. The Department of Agriculture has decided to take tests as to the practical value of the principle of pasteurisation as applied to butter-making. Certain boxes of pasteurised butter will be held in cool store in flic colony and treated under much the same conditions as butter to be distributed on the British markets.-. Along with pasteurised butter there will be stored butter made under ordinary conditions. Thus at the end of the time corresponding with that which it will take for butter to get into the hands of the British consumer a fair idea may be obtained as to how the butter from pasteurised milk will comjiare with butter from unpasteurised milk.
