Dairy Matters.

(To tlie Editor of the Times.) Sin, —As tho dairy fanners of this district have had a rather glowing account of what a cow should produce, and as I am rat-hor afraid that tho farmers will bo kicking all their cows out of the yards, in defence of tho poor boasts T wish you would publish the following table from tho able pen of Messrs l’enn and .fames, of Stratford, who are cither secretaries or auditors for several of the largest factories about Stratford, f have also to request tho farmers of this district to compare this with Mr W. L>. Lysnar's reply to me, as published in the Gisborne Times of Saturday, August 10th, in which Mr Lysnar states that 900 gallons is a fair amount for n cow to give in a season, whereas this table shows that -120 gallons is a fair average. Mr Lysnar recommends farmers to kick all cows out of the yards if they do not average 3781 b of butter-fat, whereas this return shows 172’1K is the average —not far out for Mr Lysnar, only 2001 b of blitter fat por cow. Tho above speaks for itself, and shows how fairly Mr Lysnar has tried to treat the factory proprietors of this district in this matter. 1 leave the farmers and the public to decide. —I am, etc.,

Tims. McGuf.gou, Proprietor Kia Ora Factory

Mr T. McGregor, Kin-Ora Factory, Giobornc. Dear Sir, —Taking two factories that wo are connected with the answer to your queries works out as follows ; Number of cows milked... 1776 Milk in lbs for year ... 7,831,280 Butter-fat do. ... ... 305,796 Average fat ... ... i>’94 Milk per cow in lbs ... 4409 Butter-fat per cow in lbs 172T8

With regard to over-run, you ought to make 10 per cent., that is 110 butter to 100 butter-fat, but there are many factories that make loss, and very few that make more if the test is fairly taken. Wo have not sufficient information to sny what has been the average price paid for butter-fat tins throughout tho North Island.
