SMALL CAKES HOT OVEN REQUIRED SMALL CAKES 1 have had a number of requests 'lately for recipes for small cakes baked in patty tins or paper cases. Most small cakes need a hot oven to enable them to cook in a short time. If a slow oven is used the cakes are liable to be very dry and crumbly. QUEEN CAKES ;] Ib. butter. Jib. sugar. 2 eggs. 1 teaspoon baking powder (level). 6oz. flour. Essence lemon or vanilla. Sultanas or currants. Cream butter and sugar, add beaten eggs and flour alternately. Put in paper cases or greased patty tins. Bake in a quick oven for 10 minutes, top off, bottom low, 450 deg. SMALL CREAM CAKES Beat together two eggs and a level teacup of sugar, add one cup flour, one heaped teaspoon of baking powder. Lastly add ltoz. melted butter and a quarter of a cup of hot milk. Bake in greased patty tins or paper cases, oven 400 deg., both switches off, for 10 minutes. When cold decorate with cream. NUTTY JOYS .{lb. butter, ilb. sugar. I egg. I 11 cups flour.--1 teaspoon soda. II cups dates and a few walnuts. Cream butter and sugar, add eggs, then flour, soda and fruit. Put in patty cases and bake in a moderate oven, 400 deg., for 15 minutes. WHOLEMEAL QUEEN CAKES 1 dessertspoon golden syrup, lib. wholemeal, ilb. butter. 1 teacup milk. 2 eggs. 1 lb. sugar. 1 lb. sultanas. 1 teaspoon soda. Salt. Cream butter, sugar and golden syrup, add beaten eggs, stir milk with soda dissolved in it, then flour and sultanas. Beat well and bake in greased patty tins or paper cases in a hot oven, for 15 minutes, 42Edeg., top oil, bottom low. APPLE CHEESE CAKES Peel and core six large apples. Boil them in a quarter cup of water until soft, then mash well and add a pinch of salt and grated rind and- strained juice of lemon. Cream lib. butter and three tablespoons sugar, add 2 egg- , yolks gradually. Stir in apple mixture. Line patty tins with flaky pastry. Prick well and three-parts fill each with mixture. Bake in a quick oven, 15 to 20 minutes, top off, bottom medium, 425 deg. CHEESE CAKES 1 cup flour. 1 teacup ground rice. lb. butter. 1 teacup sugar. 1 teaspoon baking soda. 2 eggs. Bent yolks and whites of eggs separately, then beat all the ingredients together to a stiff batter. Line patty pans with pastry and bake in a quick oven, 450 deg„ top off, bottom medium, for 20 minutes. CORNFLOUR CAKES 2oz. cornflour. 2oz. flour.
