Cleanliness is the great desideratum in placing beer before "the British public, and having tnis object in view the following is my modus operand!; After each cask of beer is drawn in my hotel the pump is taken to pieces, all joints broken, the fittings externally and internally immersed for 20 minutes in a strong solution of kot water and soda, and the parts carefully washed—first in hot, afterwards in clean cold water.
