A WORD OF WARNING. Good beer is frequently rendered unpalatable by dirty pumps and tbeir connections. Cleanliness is the great desideratum in placing beer before the British public, and having this object in view the following is my modus operandi: After each cask of beer is drawn in my hotel the pump is taken to pieces, all joints broken, the fittings externally and internally immersed for 20 minutes in a strong solution of hot water and soda, and the parts carefully washed—first in hot, afterwards in clean cold water. The pump is then replaced in position and all connections made air-tight. This “ Special Export Brew ” is now on tap, and I have pleasure in offering it to Connoisseurs of our National Beverage.
