THE CHELTENHAM BUTTER FACTORY.
(to thk editor)
Kir, — In 10;'!}' to the letter ot "Shareholder No. 2," which uppt ured in your last ni»ht (or3ot,h) issue " Shareholder " seems to jump at the conclusion that I am complaining at the change of machines made in the factory, tjuchis uot the case I wished to draw attention to the ii)cr>nHii»teDcy of the tables c.» published, iv which I termed a "Bill of excuses " for the reason that it cottaiund little else, uu information as tD milk received at the various crearaies being givon, or such other informatioa that shareholders would be interest 3d in. "Shareholder" further 5-ays that he cod salted the secretary, and hi gave him for the year 1895 '28 71 lbs of milk to lb of batter Now, Sir, 1 ai*o consulted the secretary, aud he gave me for the satue period 26 471bs of milk to lb of butter. Tbis is just my reason for going into print, to show no aoo tide nee can be placed on the statements shareholders arc treated to from time to time. With regard to " Satisfied Shareholder" I am only too pleased to bear of at least one shureuolde'r being satisfied. He 8 making a mistake in charging mo with attacking the balance sheet, I did not refer to the balance sheet at all. That was treated at the m&etiug last night. lit further nays I am full of disappoints me ut I am, to find a aplendid industry should suffer through mismanagement. He also says I seem to be the oily man able to work the Burmister machines. I know nothing about workiug separators. Now Sir, in reference to his statement, that the Burmister macb.nes are being discarded all over the v/orld, I may inform him that oue of, if not the most successful butter factories in New Zealand, uamoly, the Tai Tapu, have been for 10 years and are still running the Burmister machine. Tbis company's average ler last year was 25 'ißlba of milk to lb of butter, and the price paid to suppliers was very close upon 4d per gallon for the milk supplied, with 5 per cent on capital subscribed, and showing a profit on the year's working at that. He also states that the gentleman who organized the C.C.I*. Co. "imported a Rj eciallv experienced man from the TaiT:ipu Factory" to run the Burmistev separator at the Cohton creamery. Aiother misstateiuent, us the pei son who worked the separator during the period I referred to came from Taonui, and the result is well known to suppliers. I am, Ac. Shareholder.
