Frozen Meat Industry.
1 " Ayis " in the New Zealand Country ' Journal says : — The proportion of frozen ' mutton to the total amount of mutton consumed in Great Britain is enormous- ' ly greater than it was a few years ago, and unfortunately, too, the average quaI lity of New Zerland mutton* does not compare so favourably with that of other countries as it did in the past. , The mutton of other countries has improved in quality, while that of , this colony has shown a falling off. Only in the lamb department have we held our own against all competitors. Fat lambs are a specialty of the country, and are one of the chief sources of profit to producers. Indeed, sheep owners for the last two or three years, would have been in a bad way had it not been for the annual fat ; lamb harvest. It is a serious question however, whether the annual drain upon the lamb stock is not telling heavily against the character of the flocks, to say nothing about the number of maiden ewes that find their way to the freezing chamber.
