A New Preserving Process.
(Per Press Association). Sydney, August 6. An important invention has been perfected for preserving meat. The process is a secret, but it is stated to be simple and inexpensive. The meat retains its appearance and, it is saiu, its quality also". Several joints preserved on May 2nd have kept their sweetness and juciness, and to the non-r.rofessional look as fresh as meat killed a couple of days a-o. If it realised the reasonable expectations it will revolutionise the dead meat export trade. A side of mutton has been sent to China to be tested on return ; meanwhile a fellow one has been retained iv Sydney which seems to be in excellent condition. Another lot of meat has been forwarded to Taliati. it is claimed that a thousand carcases can be preserved for a few shillings. Another obvious advantage is that when unloaded from the steamer joints can be cut and hung, it is averred, almost any length of tune.
