The Dairy School to be opened at Stratford on Thursday next will, we are confident, exercise a most beneficial influence over the dairy industry not only on this coast, but over the whole of the North Island. The instructor, Mr McEwin, is one who not only thoroughly understands his business, but possesses the rare gift of being able to impart his knowledge to his hearers. We learn from the Egmont Settler that the best machinery and appliances obtainable are already prepared for the practical instruction of the pupils. The great objects to be attained are excellence of quality and uniformity in color and flavour of the butter produced by the various factories. Those can only be arrived at by care in the selection of dairy stock, and following out in the minutest details one general system. The results achieved may not be very great during the coming season, but in two years we anticipate they will pleasurably astonish even the most sanguine. The only remaining thing is for the dairy farmers to do their part with diligence, and to supply abundance of milk to the factories. 'J heir work is hard it is true, requiring constant and unremitting attention, but the reward is proportionately great. We sincerely hope the new school will be a most complete success especially as it will commence under such favorable aus pices.
