o — - Regarding the Gothic's shipments of chilled beef, the London correspondent of the Auckland Herald writes : — As the beef was landed, sling by sling, each lot proved to be in splendid condition, of bright colour, and without the slightest symptom of mould or taint. A test was at once made by perforation, when it was ascertained that beyond a slight hardness, just on the surface, the meat was soft everywhere, and showed no signs of being frozen or having been frozen. The quality of the beef was also pronounced by the experts to be first rate. In short the experiment seems in all prospects successful. The meat has been pronounced by experts to be superior to the average quality of the chilled beef from America. On all hands its quality is described as " splendid." If it had come home frozen instead of chilled, it would only have fetched about 2£d instead of over 6d. At the same time, it must be mentioned that there are even unbelievers iv the permanent feasibleness of the process. They persist in maintaining that beef cannot be kept good in a chilled condition for a period longer than 30 days." So far this theory seems to have been, conclusively falsified. But there is no doubt that the greatest cattle will al< ways be essential to success in shipping chilled meat.
