Mr Gillies, the Victorian Agent-Gene-ral, has engaged the services of analysts to discover whether excessive freezing or prolonged storage is" the cause of injurious chemical changes in butter. Two samples of the Celtic King's butter arriving at a temperature -of ten to twelve degrees were found to be quite pure. Another - ' sample of Victorian j after nine months '■ storage,;' was 'pronounced just free from margarine, though 'it had apparently deteriorated. .'Another sample similarly stored^ contained fourteen per cent of margarine.
