When so much of the present and future prosperity of the colony is dependant on the encouragement and development of the dairy industry, the Government are acting wisely in im porting the very best men whose knowledge on the subject is fully recognised, and who will be able to impart useful instruction to those engaged in the business. Mr McEwan, we are told by the Otago Daily Times, who has been visiting the factories in the South Island, says : — " The adaptability of the country for dairying was most favorable because of the climatic conditions, pastures, and abundance of good water, therefore New Zealand should be able to send the very linest butter and cheese to the markets of the world." He condemned the lack of uniformity in the quality, which was owing to many of the n'akers following out systems of their own. This drawback, he suggested, could be done away with by the establishment of a uniform system of instruction in dairying schools. After pointing out certain defects in the factories in regard to the regulation of temperature, he touched upon a most important point — the heavy losses experienced by the waste of butter-fat in the butter-milk. He was emphatic on the bye-products being used to the best advantage, and said the bacon question was only second in importance to cheese and butter. It has always been a wonder to us, seeing that every settler on the land knows the enormous prolits to be made in pig rearing, the certainty of a market at the proper season for bacon pigs, and the demand which may be said to exist all the year round for fresh pork, so little attention is paid to this important subject. There exists at the present time a demand in this district for pigs which cannot be ■upplied even to the extent of 15 per cent., and if those in a position to do so were to make a strong effort to meet it, they would make a big stride in the direction of helping to remove the depression which now exists in agricultural and pastoral circles.
