The Butter Industry.
.. -o(Per Press Association.) Melbourne, January 17. Mr Wilson, Government dairy expert, says he tried shipping butter in a similar way to the Sewell process 10 year-s ago. . The objection he found was that the brine had a tendency to draw the sap of the wood, which then tainted the butter unless the casks had been well saturated some weeks before hand with brine and the sap well exhausted before the butter was put in. This entailed expense. Moreover there was the risk of the hoops coming off the casks, or becoming loose and thus allowing the brine to escape, in which case the butter would, no doubt, be spoiled. Ho would like to see an experiment with several tons by way of the Red Sea, and, while the Agricultural Department would not adopt the process, it was willing to render all the assistance possible to any intending shippers who might try the experiment.
