Mr A. H. Wilson, a well known dair v expert, who has had considerable experience in the industry in Australia, in a letter to the Canterbury Times says: — "In places some distance from tbe railway line I would in all cases recommend cheeae factories. You can, in nearly all cases, make a pound of cheese from a gallon of milk, but you cannot make a pound of butter from two gallons of milk. Cheese also is not nearly so perishablo as butter, and does not lequire the machinery nor tbe extensive cooling procesees tbat accompany tho other product. The collateral prices are also on the side of cheese. Say milk at 3d per gallon, and cheese at 6d per pound. Tbe relative margin is 100 per cent. To a pound of butter take -i gallons of milk at 3d por gallon — this represents 7.}< l. Say a Home buyer gives you lOd — a very high price at the factory door— the rela tive margin is only at tbe most 35 per cent. Now. iheie is a large demand for cheese in England, in fact it is questional le whether next year but ter \ri(< not be a drug in the market, as Victorip, with her bonus fed industry, talks of sending 10,000 tons Putting this in pounds icpresents 22,400,000 pounds of butter from one colony alone. Farmers should pnu^e befoxe'they rush into butter factories instead of cheese."
