Butter and Cheese Contests.
The final results of the batter and cheese contests carried out at the World's Fair, have now been published and the awards show the Jarsejs to be the winning breed in both testi. At the trial three breeds competed, viz , Jersey Guernsey, and shorthorn. There were 25 selected animals of each kind, 75 in all, and the trial was conducted for 15 days, during 10 of which cheese wag made. The plan for a 10 day test of2scowi of each breed was adhered to as nearly as the exigencies of the case would permit. Three breeds went into the competition, and by careful tabulation of the figures we obtain the following result:— Pounds. Total yield cheese by Jerseys 969$ Total yield cheese by Guernseys 755$ Total yield cheese by shorthorns 724$ The average quantity of mite re. quired per lb of cheese was 8 791 b for the Jersey, 9'821b. for the Quern* 86V6, and 10861 b for shorthorns. The scale adopted in judging the cheese was '.—Flavour, 55, texture, 25 ; keeping quality, 15, colour, 5. The Jersey cow Ida Marigold, 32,615, eight years, owned by C. A. Tweed, Buffalo, New York, made the best record in the test, The results are certainly a great victory for the Jerseys, especially the cheese making contest, as for this purpose the Jerseys have never been held in very high esteem among dairymen generally The pity is that some of- the other breeds of dairy cattle were not entered in so important a competition. \ ,y
