An Industry of the Future
» Tho banana is one of the most valuable food products of the earth. No other vegetablo compares with it in productive aess, as Ilumboldt pointed out, and none other is so rich in pure food constituents. Yet it is in ono sense almost a neglected product. Bananas are eaten as fruit more and more every j'ear, but until now hardly anything has been attempted in the i way of making a staple meal of them, althouga bauaua meal was known as long ago as tho time of tho Montezumas. It has been supposed that this meal could not bo made in a manner to keep, but recent experiments have proved that it is possible. Several governments — notably those of TJritain, Germany, and tho United States — have now becorno interested in tho question, and altogether it is likely that within a few months the manufacture of banana meal will be an established industry in various parts of tho world.
