Interesting to N.Z. Cheese Makers

A number of New .Zealand farmers and Settlers will, ii is hoped, compote for the 2*o guinea jubilee prize to be given at the Frouie (Somersetshire) dairy show in September next for the finest cheese made pn the Cheddar system anywJiere in. . Her Majesty's dominions. Mr Henry F. Moore is the projector of the scheme, and to him (I imagine) all : exhibits should *be consigned. Every cheese must be accompanied by a certified report describing the method of manufacture. England already finports : large quantities of New Zealand Cheddar cheese. Mr Thomas Tucker, in a letter to £he Times, anticipates, that New Zealand cheese makers will be formidable comp6tittoes for Mr Moore'a prize. He advises those who comprehend how Cheddar, cheese .can be as well made in Canada' or at -the Antipodes as in Somersetshire, to read the report of Mr Wilj^m Bouron, Inspector of Dairy Produce to the New Zealand Government,; and, quotes a statement of flxaf gentleman's, to the effect that New Zealanfl 'already. sends us thousands of tons of fine ripe cheese in ApriUsMay^and June, just afr the time the previous year's stock in England \&mesvL2, ; vr! Mr'Tucter thinks there is an unlimited market for good Cheddar cheese,' and suggests that a school for teaching the method of manufacture should be started in England, where young fellow* might learn prior to emigrating to New Zealand or some other pastoral jeolony, and becoming isfceeae manufacturers themselves.
