Butter in Sydney
A correspondent in Sydney, writing on the subject of the markets in that city says :— " The market rates quickly rise and fall, for example : Butter N will be glutted on Monday and offered at lOd to Is, and the following day the market will have been rigged and butter scarce at 2s per lb. Cheese suffers in the same way. This is caused mainly by certain large orders getting into the hands of one or two who are sure of an outlet for so many hundreds of kegs for export, and then these parties risk the balance, having money to do it. But the Lord help the New Zealand shippers who instruct consignees to sell at the first chance at Is. Suppose the consignee is A, he sells to B C, and Co., hence a commission to A on the sale at ls and a third profit in the partnership. A No 2 ring tried the same game, and were stuck with 1500 kegs of butter, since gone bad and sold to the pastry cooks. Some smallfry enjoy the same benefits as Ring No. 1, and get a big profit by watching the bigger fish." We must confess that the " buttermen" in Sydney are '.'nib better than they should be," if our correspondent's statements are correct, and we have known him too long to doubt his probity.
