SiR, — Can you inform me if it is not usual to cut through the hams and aides ©f bacon before judging, as it seems to me hardly fair to judge the quality of these articles by their outside appearance. I myself was not an exhibitor in these classes (hams and bacon), but had I been, I should certainly have felt better satisfied if this had been done with the result, as both grain and colour could then be seen. — I am., &c, An Enquirer.
