High Game
•♦• • • •• The Lancet opportunely points out that it is sheer wantonness to throw away game because it happens to be a little " high," as permanganate of potash. (the basis of Condy's Fluid) will purify it from the taint if carefully employed. It will suffice to cleanse the game thoroughly, and wipe it quite dry with soft cloths, rubbing a little salt into the. worst parts.- We think, however, that the following .simple treatment will be found more efficacious than that recommended! by the Lancet. Draw the birds without delay, rinse with, soda water, then with pure cold water. Wipe dry, feud rub them 1 lightly^wjth ( % fixture o fine salt and , black pepper.' If \i be wished to Iteep them some time, .put in the cavity of each bird a piece of charcoal, : arid hang them in a cool place with a cloth thrown over them. The charcoal will be found an admirable preventive of .decomposition. \ It is to fee ' noted iha^ game ' which is • simply " high" without lieing^uiaid, is particularly, easy of 'digestion- Sand of igreat value to) invalids. ; r ■
