Frozen Meat Trade
Mr George Stimpson, of the Central Meat Market, who has from the first been one of the largest purchasers of Nevr Zealand frozen meat, sends an interestm? communication to the Lire Stock Journal re the best Bort of sheep to rear for refrigerating purposes. His views are not singular — indeed they coincide almost word for word with a letter from a butcher at Smith field which the Secretary of the Australian Company showed me about twelve months back.. Stimpson says i ;— rv As to the best style of sheep to rear in. N"ew Zealand for refrigerating ,ajnd;sfkle7 here, I hare no hesitation in saying that the best price would be realised bj a cross between Hampshire Down rams and merino or cross-bred" "eweST" "Tfts carcase of such sheep would weigh about 9| stone. The ewes might be a cross - between Lincoln and merino, and even though it approached very near the Lincoln type, the result would be stiltsatisfactory."
