Cheese and Butter Factory.

THB EDITOR OF THB FEILDING BTAE. Sib, — One of the objections I have heard against the proposed Cheese and Butter Factory is that the proposed capital was unnecessarily large. All I can say is that it is my conviction that it would, not pay to start a smaller company if 4d per gallon is to be paid. * Quite another thing is, if the milksellers will subscribe among themselves, say £3 10s per cow, then they might put up a modest little factory for 150 cows for about £500. Of course a rough shed might be put up for less, but it would certainly deteriorate the quality of the cheese. With, say £150 to pay maker's salary, interest, etc., for six months, and then wait patiently for that term before they got. any return. , Taking into consideration the character of the district, I think there is another manner in which a large company might be started for cheese only. The company formed with £5000 capital, whereof only £1000 is called up the first year. — First season a small cheese factory for 150 or 200 cows is erected in Feilding, cost between £600 and £700. — Whenever milk from 150 or 200 cows is promised at any place (say Kiwitea or . Bunnythorpe), a small "make-room" with vat and presses is erected (cost about £250) and the cheese, which is made on. exactly the same system as at the chief. -faTtfttfryvis'sent to the enlargpd curing•tbbtn'inS'eilding. ; : * V: i'ft'atfe no ; personal experience of the working of a factory 6n this plan, but do] not see. any .seriqus^bjection to. .it, and give it' 'for whatever it is worth for the, ,7eonsjdeT?a,tio/i of rfchose nearest interested.' —I am, &c., '■ - ■ J.
