Salsify, or the vegetable oyster, makes a splendid change for the table, and is easily grown. The cultivation is the same as for parsnips. Another fine tuber is scorzonera. The roots are eaten like parsnips, and the leaves can be used in the salad bowl. The cultivation is the same as advised for parsnips. Kohl Babi can be used when the size of a small turnip. It makes a splendid change from turnips. In hot and dry seasons the bulb, which grows entirely out of the ground, will stand dry conditions without becoming strong. The cultivation is the same as advised for turnips. Another vegetable which is not grown as it should be is the artichoke. The artichoke is easy to grow and makes an excellent substitute for potatoes. Served with white sauce it makes an excellent dish. One of the best of the salad plants is endive. ’This is grown in the same way as lettuce. No salad bowl is complete without endive. When the plants are matured they should be covered over with an inverted pot or tin. In this way the blanching makes it very crisp and ihc flavour is also improved. I'.T.P.
