Two More Bel! Tea for Evening Parties BISQUE TORTOUI. Beat yolks of 2 eggs with J cup sugar and add to 1 cup scalded milk (not boiled). Heat until mixture coats spoon. Remove from fire. Pour i cup cold water over loz powdered gelatine. Add to hot custard until dissolved. Cool, add 1 cup whipped cream, vanilla, and salt. Fold in whites of the 2 eggs beaten stiff, and pour into individual glasses. When firm, unmould and sprinkle with crushed macaroons or nuts and bits of bright jelly, or leave in glass, pile nuts, etc., on top. and finish with whipped cream. Cocoa may be added to the mixture for variety. Serve with Bell Tea and delight your guests. CHOCOLATE MACAROONS whites ,of 1 or 2 eggs vanilla flavouring a few pistachio nuts 6oz ground almonds 1 tablespoonful chocolate powder 9oz castor sugar Mix the ground almonds, chocolate powder, and castor sugar together. Whisk the whitest to a stiff froth, and add sufficient to mix all to a stiff paste, together with a few drops of vanilla flavouring. Spread the prepared mixture on wafer paper, making small macaroons. Brush them over with water, and place in a moderately hot oven. Bake for about 20 minutes. Blanch, skin, and split a few pistachio nuts, and place a piece on each macaroon directly they are cooked. Serve with Bell Tea and delight your guests.
