VITAMINS IN APPLES
THE " KING " OF FRUITS The following extract is from the ‘Horticulturist,’ a monthly paniphlet issued by the Norfolk County Council : •’ . ' ’ “The apple has always been called the King of Fruits, and the recent scientific, study .of the relation of food to health has confirmed the age-old belief -that apples and good health, are synonymous. The discovery ,of , the vitamins—-substances found in certain foods—was , the . greatest \ .discovery of modern times in its contribution to the knowledge of nutrition., M'Collum, the great scientist in the field of nutrition, says; ‘ Without the vitamins it would be impossible to maintain life.’ Four of these substances—A, B, 0, and D—are well known, though still unidentified chemically. Much scientific work is now being done on substances called E, F, and G, and before the secrets of nutrition are all disclosed to earnest laboratory, workers still other vitamins may bo isolated. Nature has hidden the vitamins in the natural foods, milk the first food, fruits, vegetables, and the germ of grains, but the kind and quality vary greatly. Many charts have been prepared which show the amount of vitamins present in different foods. Dr D. J. Quigley has prepared a chart which shows the effect of the several vitamins on health and nutrition. Among these important properties he lists the following:— “ Vitamin B: Increases appetite ; promotes growth by] stimulating digestive and other processes; protects and stimulates nerve and brain energy'and protects them from certain diseases; increases quantity and quality, of milk of nursing mothers. If, vitamin. B is not present in sufficient' quantities in the daily diet, these results!may occur; Impairment of appetite, and digestion ; loss in weight; loss in vigour; constipation, pyorrhea,,, emaciation,, , subnormal temperature, enlargement of adrenals; increase in size and weight of various glands of , body, including heart, liver, kidneys, stomach," and thyroid. Various types of impairments to nervous system may also be noted, leading to paralysis of groups of muscles, neuritis, and atrophy of certain lymphid tissues throughout the body. Vitamin C: Regulating substance, stimulating and aiding digestive processes; builds resistance to disease. Lack of vitamin,. C results in scurvy, reduced haemoglobin content of the blood, reduced excretions, decrease in weight of various organs of the body, bleeding gums, smelling and . redness of gums, teeth defects, irritability, lack of stamina. retarded growth, low resistance to disease, com gestion’ of internal organs. These vitamins of such vital importance to health and life are found in their finest form in a food which is Nature built and which comes to the table without manmade changes. This food is the apple. Its shape, colour, size, and chemical composition are all due to its hanging in the summer sunshine long enough to be a finished product, needing nothing done to it to make it ready to eat and to be enjoyed.
