February 8. “ Tho prohibition of preservative in butter should not have the slightest effect on either the demand lor or the price of colonial butters in England, ior tho leading New Zealand factories do not use preservative,” said Mr C. P. Agar, general manager of the Tai Tapu Dairy Company and president of tho Canterbury Chamber of Commerce, when asked for an opinion on the cablegram from London yesterday stating that, through tho prohibition of preservative operative in England, Europe would reap a glorious harvest at tho expense of the colonies. The newspaper ‘ Grocer.’ an English trade journal, maintained that deterioration of colonial butters was prevenliblo only by the .use of preservatives, so that England would have to rely for its supplies on European suppliers.

“ Our factory and most other leading factories have not used preservative in tho manufacture of butter cither for tho New Zealand trade or for export for a period of between ten and twenty years,” continued Mr Agar. “Tet I have known frequent instances of our brand having been stored in London and sold in the trade months after tm some cases eleven months after) the date of manufacture, and the butter opened clean and fresh in- llavor, and contained no preservative. Fifteen years ago wo experimented by storing butter with and without preservative if anything, the pure butter stood up better, so that farmers may assume a reason other than a desire to protect the producer prompted the article in question.”
