Boiling, even for a short period, is deleterious to both the flavour and aroma, and a woody, bitter beverage results. Two or three minutes subjection of Coffee to water at just BELOW (190 deg F.) the boiling point removes as much caffein (80 per cent.) as can bo extracted without very prolonged treatment. After a (wo or throe-ininule water treatment of freshlyroasted, ground Coffee, the infusion should be immediately filtered and served. Coffee prepared in this wav results in. a most palatable, stimulating beverage, w-hic i is not harmful. PURE COFFEE m It is certainly true that strong Coffee,without anv additional substances, with the possible exception''of. a portion of sugar, is the most benchcia form of. the beverage. Kot only have I found that small repeated dose* of Coffee arc entirely harmless, but many similar experiments, resulting in the same conclusions have been performed during the last lew years by irofessor John Bunker, of the Massachusetts Institute of Technology, under the direction of Professor bamuel C. Prescott! Several investigators, in addition to my own work, have found Hot Coffee to be deodorant, antiseptic, and germicidal with reference to certain bacteria. Coffee nets as a diuretic, and, according to Cuslmy, it increases the peristaltic movement of the intestine, and, as a consequence, it has been stated by Potter that it functions as a laxative. Strong Coffee lessens the effect of alcoholic beverages, and in the eases of light headaches, not due to gastric disorders, it is immediately effectual. When not taken in excess, it is the most beneficial and useful drink in the array of stimulating beverages so far employed by man.
