Siu,—The letter of “P. M.,” in your issue of the s!h inst., calling attention to enormous increase in the price of milk, was certainly candid and to the point; and ni doubt rather hot for the committee on behalf of whom 6. F. and Co. write, as appears from the nature of their response. The quotation from their suppressed letter shows the miserable explanation which they had recourse to, in order to make a black case look somewhat clear. People are not, however, to sit quietly and bo veiled by those worthy benefactors of the working-class. Let consumers withhold their custom alto, gelhcr, as suggested by “P.M.,” if tho comraittee of supply are determined to make no abatement I would further suggest that samples of milk be procured from the various sellers and submitted foranalysation It won Id be most interesting to know the result of a chemical analysis of some of the milk sold in Dunedin. In the Home Country a food analyst is appo nted for parishes in and around large cities. 1 have, on more than one occasion, seen a constable empty the milk-cans in the street, and the seller, in addition to this humiliating lesson, brought before a magistrate and severely fined for his dishonesty. Various instruments are employe i for the purpose of determining the ehsmical constituents and purity of milk—such as the hydrometer, lactometer, and several other inventions of more recent date, 'J hese are all very simple, and might be employed in every household for the purpose of testing the goodness and quality of milk.—l am, 4 c., Fairplat.
