Celery Soup. Baked Fillets Snapper and Caper Sauce. Chipped Potatoes. Parsnip Balls. Orange Meringue Pudding.

Baked Fillets Snapper.—Allow 6 snapper fillets, grating of lemon rind, seasoning salt and cayenne, 1 beaten egg, 2 tablespoons flour, about' 1 cup browned crumbs, 2 tablespoons dripping and butter. „■ ' :

Roll fish into flour and seasonings, then into beaten egg and breadcrumbs. Melt butter in oven pan. Place fish into pan, cut side uppermost. Bake in a fairly quick oven. Time about 30 minutes. Serve, on heated dish with sauce in sauce boat and parsnip ball round edge of dish.

Orange Meringue Pudding.—2 tablespoons cornflour, 2 tablespoons flour, 1 cup boiling water, 1 tablespoon butter, -jf cup sugar, 2 eggs, 4 tablespoons castor sugar, rind and juice of \ large lemon, rind and juice' of 1 large orange. .

Mix flour and cornflour to a paste with a little cold water, and add to the boiling water and grated lemon and.orange rind. Cook for 2 minutes. Add butter and £ cup sugar, then remove from stove and add the egg yolks and lemon and orange juice. Pour into a piedish and cover with a meringue made from the egg whites and castor sugar. Brown in a slow oven.
