COFFEE IN MANY CLIMES

In the art of coffee-making there are no standards; each country has its own ideas on the subject. The French like their coffee black, strong, and hot. In Turkey the Mohammedan boils his coffee over a. charcoal fire in a small brass kettle; each cup is made fresh, and the coffee consumed, grounds included, in small sips. Russia, Switzerland, and Denmark follow the French fashion. Bulgaria prefers Turkish methods. In Brittany tho housewife thinks coffee not worth drinking unless it is made from beans she has roasted. Tho Italian idea combines the methods of Brittany and Franco. Tho Austrians, more original, make delicious coffee with milk topped by whipped cream. The Mexican drinks a brand of coffee peculiarly his own. Ground coffee is placed in a cloth bag, which is immorsed in boiling milk and water sweetened by brown stick sugar. In Brazil, Chile, and Paraguay they liko their coffee black and often. The Cuban pours and ropours cold water over finely ground coffeo contained in a flannel.bag, and uses the extract obtained for making "cafe au lait" or "cafe noir." The native of Algeria takes strong black coffeo in. the street; he purchases the beverage from vendors who boil it; over portable stoves. Coffee from Yemen has an especially fine flavour, due, it is said, to tho fact that the Arabian waits until the ripened pods fall to tho ground before gathering the fruit.
