'fit can be claimed that a considerable amount of progress has been achieved in finding methods of raising the quality of butter to a still higher level, and in eliminating factors giving rise to troubles in cheesemaking as in milk supply, starters, and manufacturing process, and storage," stated Professor -W. Riddet, Director of tho Dairy Research Institute, at the National Dairy Conference. ; ; "Since the institute commenced its work four years ago many popular theories have been tested, and opinion has been replaced by fact, on which alone solid., progress depends. Sound progress necessarily is slpw, and spectacular results seldom arise in any research work. Work on existing problems .is far from complete, and the field of constructive research into now methods and new processes is comparatively untouched. But the whole staff is extremely enthusiastic, as it: is already tackling as much as it can cope with, and further work cannot be undertaken without additional assistance." .
