MILK GRADING

r) Eeplying to a question asked "by Mr. JW. J.Polson (Government, Stratford) in the House of Bepresentatives to-day jn connection with the wide divergence of opinion upon the regulations in force regarding milk grading, the Minister of_ Agriculture (the Hon. Ci E. •. MaciniUan) said he was, fully.aware of the difference of opinion. All. the essential points in the arguments put forward py a. scientist referred to by Mr. Polson were thoroughly considered by the Department's scientists before it was . ■d.ecided'to make the curd test the .official test for milk grading. ."■' • - While in no way depreciating the merits possessed by the test advocated (generally termed the microscopic count test) or the higher scientific knowledge needed for carrying it out efficiently, said the Minister, tho conclusion was .reached that for the particular purpose m-.view the^eurd test was distinctly preferable. The Minister said ho would be .pleased to give Mr. Poison an opportunity, to go fully into the details of the question from all points of view No one desired to belittle in the slightest degree the value of scientific methods, but it was necessary that in the matter of\ milk grading the method used should be that best adapted to securing a milk supply which would pro- '- duce high quality cheese; and for that purpose the curd test was considered to be the best, and moreover it could be regarded as being in its own way quite a scientific method.
