IN THE KITCHEN
Mr. David Rhys, the youngest son of Lord and Lady Dynevor, is working in the kitchens of the Hotel Metropole, in Northumberland avenue, London. He has been spending a week in three out of the four coiners," as the departments of the kitchen are known, for he is determined to learn everything .there is to be known about the hotel business, which he proposes to make his career.. The next stage in his practical apprenticeship will be to learn how to be a commis, as the whiteaproned waiters' assistants are known. Mr. Rhys, who is aged 23 years and was educated at Eton, said to a reporter of the "Daily Mail":—"I have already learnt that an extraordinary amount of skill is required to shell peas and peel onions in a real West Knd manner. Until one has worked with one's coat off in an hotel kitchen one cannot appreciate the amount of knowledge required to produce a good dinner. I intend to so through every department in the hotel."
