DRIED MILK PROCESS

CHEISTCHUECH, 18th September.

The New Zealand Wheat Eesearch institute has' received., a letter from the New Zealand Co-operative Dairy jCompany, Ltd., Hamilton, in reference fo the manufacture of dried milk. It iad adopted a new method advocated fey the institute's chemist (Mr. H. E. ,\vest), with the result that a product had been obtained superior to anything that had been made before.

At a meeting of the institute to-day the chairman said that as a result of Mr. West's tests the . quality of dried milk for. baking purposes had been greatly improved, and it was equal to ordinary or condensed milk. It was tone of Mr. West's most important Ipieces of work, providing an'outlet for another dairy product.
