Choose ripe, perfectly sound damsons, wipe them, remove any stalks; and put the fruit in v jar" with a pinch of salt and Water to cover. Cover the jar and put it into a moderate oven until the damsons are rioft. -. ■ ■ ■
Rub tho fruit through a hair sieve, weigh tho pulp, and to each pound allow "Jib of sugar.- Put the pulp and sugar into a pan over low heat and stir until the sugar has dissolved then boil, gently from 'J to 1 hour, stirring all the time. The mixture s'liould.become quite stiff. Put into small jars and cover like jam.
Many people, who do not much care for jam ' and ordinary v preserves appreciate the rather tart, unusual flavour of damson cheese, which is always a success on tho tea table. • ■
