SEASONAL VARIATIONS;
"Seasonal Variations of tho Wellington Milk Supply" was tho title of a paper road by Mr. R. L. Andrew at-the last meeting of the Wellington Philosophical Society It is well known that the quality of the milk varies with tho season of tho year, and Mr. Andrew has prepared .charts whicli showed these variations for different years in . Wellington, anil compared them with milk tests made by a. London firm of milk suppliers, in which comparison New Zealand showed a higher percentage of fats, and solids other than fats. A rise. in this percentage^ was shown to coincido with a dry spell in the weather, A minimum of fats and solids was shown for October in each year, and occasionally two maxima early in the year. A further variation inttho fats was found between, tho morning and the evening milking, but the speaker said that if the titno between milkizigs was equal tho variation disappeared. The speaker stated that the best milk could only be secured by buying on the quality basis, that is, by paying more for milk which showed a higher percentage of fats and solids not fats; - and suggested that a bonus should bo paid for milt- cleaner than a certain.standard.,
An urgent necessity was the improvement of tho transport,of milk, especially when it had to bo sent long distances. The idea of cleaning tho milk received was wrong; tho evil should. bo remedied by ensuring cleanliness on tho farm, during transport, and in the delivery station.
