Probably, no part of New Zealand offers better facilities than does the Elleeraere district for the raanufaotare of high class dairy produce, and that a few of the farmers know it is abundantly proved by the satisfactory prices which some of our dairies always übtain for their butter. But, unfortunately, such dairymen are but few and far between, and the majority, looking upon the dairy as bat a very secondary adjunct to the farm, are content to letl things slide on m the old fashioned, rolo of thumb way* Though such methods may serve, after a fashion, for a local trade, dairying if it ii ever to be a business success must be carried on on very different lines. The shipment to England by the steamers Pakeha and Tainui shows conclusively the fatilifcy or trying to foist inferior goods on the Home markets. A quantity of that shipment was not sold, being below the, quality demanded by <;he trade, and when one recollects the rubbish, that pile has often seen on the counters of the London shops, this is saying a very great deal. The dairying industry : has a great future before it. Antipodean butter can be landed, m England just at the time when Home made batter is scarcest, and at ita highest prica. No part of the Antipodes can compare with -New Zealand m general aod Canterbury m particular m dairying, and it is a thousand pities ;that special efforts are not made to develop the industry properly. That ; can only be Hone by , shipping only the choicest dairies } it is certainly useless to send the miscellaneous produce of dairies of all degrees of excellence. And until farmers will realise that there is but one way to carry on the industry, and that the most approved and gcieritifio way, New Zealand butter will nevergain a footing. in the English markets. -
