AUSTRALIAN PRESERVED MEAT.
It has often been remarked that the whole world is laid under contribution to provide sustentotion for the inhabitants oftnese islands, and there is every probability that wt shall by and by find ourselves looking to the antipodes for no insignificant portion of our meat supply. Already the Australian preserved meat has found favor in our workouses and prisons, and it is entering more large y into the domestic economy of many households. Of course it has to overcome many preju dices, particularly the disposition to regard anything that does not take the form of uncooked meat as lacking nu trition. It is however declared to be both nourishing and palatable, and only inferior in quality to the best English fresh meat cooked in an exceptional manner. As to its economy there can he no question, it being cook'd, free from bone and cheaper in price. A writer in the Times illustrated these advantages by give xg the following re suits attending the cooking ot a leg of mutton. Before roasting it weighed 9ib. I Ooz. ; after roasting, 61b. 120z.; weight of cooked meat, 4lb. 13oz. ; gravy. lUoz According to this authority “if we pay the butcher 9id. j>er lb. for a log of mutton, the cooked slice on our plate cos*", us about 19d per lbwhereas the Australian mat can be obtained at 7d. and 7id. per lb. To be able to get good meat at such a prv must prove a great boon to the wo, mg clashes, and by its partial use the ost of English meat will no doubt be pt down; but i f case the latter shomd attain a price placing it beyond the reach of p ople of moderate incomes, it is some sat ; faction to know
