Extractive maUer, 306 per cent,; Acid matter, o'l7 per cent. I have also examined the Ale for such deleterious ingredients aa aro sometimes ndded to Beer, and have found no indication of their presence. The three first eonriitions laid down by tho Committee for V/inks and Beers for the late International Exhibition, as those to which especial prominence would be given, were—lst, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd Absence of fusel oil; and all these are fulfilled in th sample.
