Extractive matter, 306 per cent.; Acid matter, 0"17 per cent. I have also examined the Ale for such deleterious ingredii nts as are sometimes ndded to Beer, und have found no indication of their presence. The three first conditions laid down by the Committee for WtNKS and BiSKlts for the late International Exhibition, as those to which especial prominence would be liven, were—lst, Low alcoholic percentage: 2nd, Freedom from acidity; 3rd Absence of fusel oil; and all these :ire fulfilled in th bample.
