I have examined the Samplk of M'Ewin's Bottled Alk submitted to me, and find that it contains - Alcohol by weight, 5*4:0 per cent; or by volume, 6 - 55 per cent. Extractive nia'ter, 306 per cent.; Acid matter, 0 17 per cent. I have also examined the Ale for such deleterious ingredients as are sometimes added to Beer, and have found no indication of their presence. The three first conditions laid down by the Committee for Wines and Beers for the late International Exhibition, as those to which especial prominence would be given, were—lst, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd AbBence of fusel oil; and all these ire fulfilled in tb sample.
