I have examined the Sample of M'Ewin's Rottlbd Ale submitted to me, and find that it contains - Alcohol by weight, 5 - 40 per cent; or by volume, 6 - 55 per cent. Extractive ma<ter, 306 per cent.; Acid matter, 017 per cent. I have also examined the Ale for such deleterious ingredients as are sometimes added to Beer, and have found no indication of their presence. The three first conditions laid down by the Committee for Wines and Bkbus for tho late International Exhibition, as those to which especial prominence would bo given, were—lst, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd Absence of fusel oil; and all these are fulfilled in th taruple.
