Extractive maiter, 306 per cent.; Acid matter. o'l7 per cent. I have also examined the Alb for such deleterious ingredients as are sometimes added to Beer, and have found no indication of their presence. The three first conditions laid down by the Committee for Wines and Bbbrs for the late Interna, tional Exhibition, as those to which especial prominence would be given, were-Ist, Low alcoholic percentage: 2nd, Freedom from acidity; 3rd Abaence of fusel oil; and all these are fulfilled in tbia sample.
