I have examined the Sample of M'Ewin's Bottled Alk submitted to me, and find that it contains - Alcohol by weight, 540 per cent; or by volume, 6 "55 per cent. Extractive matter, 306 per cent.; Acid matter, 0"17 per cent. I have also examined the Ale for such deleterious ingredients as are sometimes added to Beer, and have found no indication of their presence. The three first conditions laid down by the Committee for Wines and Beehs for the late Internai t.ional Exhibition, as those to which especial prominence -would be piven, -were—lst, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd Absence of fusel oil; and all these ire fulfilled in this sample.
