Extractive matter, 306 per cent.; Acid matter, 0 17 per cent. I have also examined the Alk for such deleterious ingredients as are sometimes added to Beer, and have found no indication of their presence. - Tbe three flrnt eonrhfions laid down by the Committee for W/ inks and Bbbrs for the late International Exhibition, as those to which especial prominence would be given, were— Ist, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd Absence of fusel oil; and all these ire fulfilled in this sample.
