Sir. —Now that there is a prospect of a certain amount of returning to prewar conditions in trade in New Zealand, would it not be ..ell, and desirable, tor the Health Department to look into the matter of the delivery of bread. One cannot help feeling that if the Department knew of the handling by “all sorts and conditions of men'' and youths that the "staff of life” receives between the bakehouse ami the. consumer, more especially in country districts, that immediate stops would be (alien to remedy affairs. All bread should be wrapped in hygienic paper and unwrapped goods such as Imus, etc., should be withdrawn from the shelves by a wooden hook straight into the delivery basket—the shelves themselves being loaded in the bakehouse and simply slid into place m the van.—l am, etc., IIOROWHENUA RESIDENT.
